Curriculum Transformation and Disability, University of Minnesota
This site is no longer updated, but contains Jeanne L. Higbee’s book, Curriculum Transformation and Disability (CTAD): Implementing Universal Design in Higher Education in PDF form. It is over 300 pages, but is offers a comprehensive guide to the subject. We highly recommended this as a foundation text. 

Decisions in Education through Perspective and THeory
While not directly addressing UDL, this site is a compendium of all the philosophical details you forgot about constructivism, situated cognition, even behaviorism and epistemology applied to instruction. This is an excellent interactive site that organizes approaches by philosophical type. Depth is an accurate label.

Their efforts have focused on Ensuring a Quality Education for Indiana’s Students with Disabilities through the Faculty Mentorship Program, a faculty training series, a learning support center and outreach to secondary schools to build awareness of making the transition from high school to college.
